Royal Birthday Cake

You are standing among your friends, thinking that “Happy Birthday” has never seemed so long. You blow out the candles quickly to get a slice of the divine cream and strawberry cake worthy of a royal celebration.

Ingredients

  • half a cup Cukier Królewski white sugar

  • 500 g strawberries (mix, leaving some to decorate the top)

Preparation

Step 1
Beat egg whites until stiff, add sugar and yolks.
Step 2
Combine the baking powder, wheat flour and potato flour. Add in portions to the egg batter while stirring gently. Pour into a greased and floured cake pan and bake for around 20 minutes in an oven preheated to 160ºC.
Step 3
Beat cream and icing sugar (leaving some sugar to sprinkle on the cake), add fromage frais, mixed strawberries and the setting jelly.
Step 4
Once the sponge cake is cool, cover it with the strawberry mousse. Before that, you can soak the cake with punch (half a cup of water, 1 teaspoon of sugar, 1 teaspoon of lemon juice). Cover the top with whipped cream and strawberries and add crushed pistachios around the bottom rim.
